The Part The Recipe Leaves Out

The recipe says to prove the dough in a banneton. You do not have one, so it goes into a mixing bowl with a tea towel, and by morning it has spread sideways. It says to score the top. You use the bread knife, and the cut drags instead of opening. None of that is your fault. You were told what to do without being given what to do it with.

What Changes On The Bench

Before: a bowl, a tea towel, a bread knife and a loaf that spreads. After: the dough holds its shape overnight in the basket, lifts out on the sling in one piece, takes a clean cut from the lame, and comes out of the oven round, high and split open where you scored it.

1. Feed The Starter

The 700ml jar holds a full feed with room to rise, and the cover breathes.

2. Mix The Dough

The Danish whisk pulls wet gluten-free dough together in seconds without packing it into the tines.

3. Prove In Shape

Round or oval silicone basket, floured with the duster, holds the dough upright overnight in the fridge.

4. Score And Bake

Lift it out on the sling, cut with the lame, bake, then store in a bread bag.

Questions People Ask Before Ordering

Do I need this if I already have the book?

The book has the recipes. This has the equipment those recipes assume you already own: the baskets, the whisk, the lame and the slings.

Is it only for sourdough?

No. The baskets, slings, whisk and lame work with any bread dough, sourdough or yeasted. Sourdough is just what most kits are sold as.

Can it go in the dishwasher?

The silicone baskets, slings and spatula can. The steel scraper and the lame are better washed and dried by hand so they do not spot.

Why silicone instead of rattan?

Rattan keeps flour in the weave and cannot be washed properly. If you bake gluten-free in a kitchen that also has wheat flour, that matters.

How sharp are the blades?

Sharp enough to score chilled dough. Spare blades are included because a lame blade dulls with use and is meant to be swapped.

Will the baskets fit my loaf?

The round is 28cm and the oval is 29cm, which suits a standard 800g to 1kg loaf. Both fold flat for storage.

When will it arrive?

Posted from the UK. Most orders arrive within 3 days.

How do I get the recipes?

By email, as soon as your order is confirmed. They are yours to keep even if you return the kit.
